Courgettes, carrots and a very old leek...?

My mother in law kindly brought us a bag of veg she'd rescued from work. Two courgettes, some carrots and a very elderly looking leek.
Can anyone suggest something I can make with them? I only ever use courgettes very finely diced in spag bol etc as I don't like them much! Carrots I rarely buy as we don't eat them on their own.
I do have plenty of cheese in if that helps...

    I think I'd grate the courgettes and put them in the freezer: you can then throw handfuls into things like spag bol where they'll cook down and you'll barely know they're there. This is a tip I picked up from another forumite last summer - like you, I'm not keen on them and they kept turning up in my veg box so I had loads!

    You could do the same with the carrots, or make some soup with them as carrot soup is lovely. You could add the leek, too, to use it up.

    Rachel Allen has a really nice looking sweet courgette loaf cake in her "Bake" book. It's definitely on my "must make" list. I love ratatouille and would probably throw the other veg in too. My mother used to coat cougettes in parmesan and fry.
  • I'd make a soup. You can't identify veg you don't really like when it's been blitzed- well my family can't- i just say it's mixed veg soup.

    Courgette and carrot muffins? The leek I'd sautee and make into a pasta sauce with a white/cheese sauce.

    Edited to say muffins could be sweet or savoury.

    how about carrot and lentil soup with the leek thrown in? Could also put the courgettes in too. Courgettes are nice stuffed or roasted with a drizzle of oil and some black pepper. They go all soft and tender. MMMMMMMM
