I've seen somewhere on here someone suggest using mincemeat as a filling for pancakes. This sounds scrummy, but doesn't mincemeat have suet in? Aren't you meant to cook it before you eat it?

Depends which recipe you useI know that thriftlady will disagree with me on this, but the recipe I use cooks the ingredients when the mincemeat is made, so it'll be fine in pancakes :T

I disagree with Penelope Penguin on this
I always put suet in my mincemeat and I never cook it. I also use it in all sorts of recipes cooked and uncooked. I've put it in pancakes straight from the jar and I put it on porridge straight from the jar too (gorgeous btw).
I've never heard that you are supposed to cook suet before eating, but you could heat it through in a small pan first if you are worried about eating it raw.0 -
And I disagree with both of you!! I cook just the chopped apple first, and add the suet into the warm apple, which tends to melt the suet through then the fruit etc. If you weren't sure, you could roll the mincemeat in the pancakes and pop in a single layer in a dish and heat through in the oven - you could do a nice topping of brown sugar and chopped nuts, syrup and brandy, maple syrup etc. that would bubble on the top.0

thats a good idea to use up the last of the xmas mincemeat.. i used delias recipe so it was warmed in the oven to melt the suet. i think the only reason you might want to cook the suet is that it is a bit greasy and floury when raw... like cold lamb fat..0

I think the reason she gives for cooking it is so that the fat coats the apple and so stops it from fermenting. I've never had a problem with my mincemeat fermenting, so I don't bother cooking it.0
