Looked through my cupboards: need some meal ideas, to make things stretch if possible

Freezer, Bag of SAusages (new)
Bag mini pizzas (had em since christmas)
1 portion of casserole left over
Box of fish fingers (opened unsure how many)
Bisto Toad in hole (will feed 2)
2 waffles
2 crispy pancakes
Box of 4 jumbo sausage rolls (ones to oven bake yourself NEW)
Bag of frozen Chicken Breasts (5 peices some huge ones though)
2 x 3 person size portions of mince beef (1 of these could make 2x2 person meals though)
2x2 packs of Chicken Kievs, 1 cheese and ham 1 chicken tikka
2 packs of bacon rashers
1x back of chunked Catering bacon (off cuts that were bought in morrisons i use this for making cheesey bacon basta)
1x pack chicken goujons
1 box of chicken burgers
frozen veg : carrots broccoli and peas.

Jar Chocolate Spread
Penguin bars
loads of 1.5 oz boxs raisans
opened jar of mincemeat (from christmas when i made mincepies)
pasta spirals
Black Treacle
P and SR Flour
Cocoa Powder
Ready Roll White icing
Icing Sugar
Green Giant Sweetcorn (3 tins)
Tin pinapple pieces, 2x tins fruit cocktail, 1x tin peach slices
4x tin napolina tin tomatoes (1.2 price in morrisons)
2x4small tins of tuna
2x full tins of baked beans
2x tins minestrone soup
1x tin raviolli
1 small tin morrisons own tom soup (dont like the taste on its own if anyone has any ideas of what to do with it?)
1x tin condensed chicken soup
2 bags of boil in bag rice (125g portions)
3 bags 62.5 gram portion bib rice
1x box chicken cuppa soups
1 jar pataks curry paste (bhuna)
1x jar Lloyd Grossman Sweet tomato Bhuna sauce
1x jar sausage Casserole sause (gonna use this tonight)
2 jars dolmio sause
2 packs supernoodles 1x sweet n sour, 1 x beef
sage and onion stuffing mix
1x micro bag pilau rice
beef/chicken and lamb oxos
mint sauce beef/chicken gravy granules
and a 2kg bag of potatoes!

well having spend two mins just glancing i would say to extend if you use the chicken breasts in strips to make curry or similar or casserole ( I know you said you are using your casserole sauce but you have oxo ) or use with the noodles and add a bit of veg and do a stir fry type thing. You could make a crumble with your tiinned peaches make a mincemeat pie choc cake with the cocoa powder sausage casserole do you have eggs and fresh veg?

Well for tonight and tomorrow, im cooking for 2 adults and an 8 yr old, and then from saturday for a week i'm cooking for 2! BUT i need this to stretch longer than that if possible! as due to O/H having been on parental leave in january it left his monthly salary short by £250 AND what with my P/T maternity pay being 511 last month, we are finding the struggle with the bills we have going out!
I mean i know how to do the whole stews and casseroles thing, and there is a few ideas i have myself for meals, BUT i just get bored of the same old crap!
I did think the toher night i could try making a quiche or even a pizza! as not done either of those before. and to be honest i dont cook THAT much from scratch alot of it is jar or packet sauces which i want to change.0 -
found it last took me while.

Just to add, In my fridge i have half a round lettuce, a few tomatoes, loads of cheese, a ready to roll shortcrust pastry pack. onions, and sarnie fillings as sliced roast pork loin, sliced roast chicken breastbreaded ham, peppered roast beef (special offers in morrisons), I have eggs, and also Clover
also in freezer, a freezer pack of rolls, a loaf of bread0 -

Hi there
Take one of the large chicken portions and cut into strips. Fry in a little oil with some sliced onions (and mushrooms if you have any); add the tin of condensed chicken soup along with a glass of white wine (or stock) add dried herbs such as dill or tarragon. Put on a lid, cook for 10 minutes and serve with rice and extra veggies from your freezer. (Will serve 2).
Make a pasta sauce by frying onions & garlic, adding some of your chunked bacon and a tin of tomatoes. Flavour with dried herbs of your choice and salt and pepper. Serve with Pasta.
Mix tuna and sweetcorn together for a topping for jacket potatoes.

they certainly sound very nice options, id use stock though, as dont buy wine, BUT i think the only dried herbs i have at the mo, are italian seasoning, but i'll have a look.
also have never used fresh garlic before, so wouldnt really know what to do with it tbh, have used garlic powder before, not sure it would have the same effect though would it lol. and at the moment, i dont know how but i doubt i'll even have any cash to get a few extras next week. But will have to have a look at my fiannces again! (forgot about a next payment due! but O/H said he will pay it on his D/card online0 -

I don't see you with any flour for the pastry but you can make a quiche with a mashed potato base. Just make potato in usual way and then make a thick layer (at least half way up) in your quiche dish. Normally I would then fry some onion and bacon (chopped), spread that on the potato base then pour on some beaten egg and milk with grated cheese in and plenty of pepper. You can adapt quantities/cooking times from any quiche recipe you find on-line. As you don't seem to have any onions then just improvise with some of your frozen veggies scattered on instead.
Virtually same ingredients could be used to make a spanish omlette.
P.S. I know they're trying to be helpful but I agree with you completely about these links to indexes and long threads (particularly the latter). IMHO many posters prefer current threads and moving just kills them. It's like the difference between chatting to a friend and looking up a huge book. But that's just my opinion...0 -
