Morning all :wave:
I have two cans of mandarins in juice and noooo idea what to do with them (or why I bought them tbh!)
Not fussed about them on their own and tried them in a cake before and wasn't keen...anything else I can do with them?

Drain off the juice and put them in a pavlova, together with some chopped strawberries and kiwi fruit and top with fresh cream.

Funnily enough I had same dilemma a couple of weeks ago when I discovered a can of mandarins near use by date in the cupboard ( bought because too cheap not to, not because I really liked them!).
I ended up making an orange jelly (layering it with the mandarins as it set) and it was a lovely dessert, made the mandarins taste a lot nicer.0 -
you can make a nice upside-down cake with mandarins. or whizz them up with some ice and booze and make an orange dachary :rotfl:0

My favourite use for tinned mandarins is in Florida salad. This is simply homemade coleslaw white cabbage, carrot and mayo with drained mandarins and a small tin of drained pineapple (chopped). The fruit completely changes the coleslaw and the mayo tastes delicious. Make sure it is well draine though or it will be too runny.0

I actually have orange jelly in the house (how did I not think of that!) and vanilla ice cream too yummm
Might send OH to work with a tupperware box full of mandarins too

I like them in orange jelly using the juice as part of the liquid.
I just drain the fruit and plonk in a bowl, put the jelly cubes in the microwave for 40 secs (or whatever the packet says), stir add the mandarin juice and enough water to make a pint and pour on the fruit. Refrigerate until set.

How about a smoothie? Add any other fruit you fancy to the mandarins and juice and blend. I also like the idea of orange jelly, and you could make it with evaporated milk for and orange mousse! Or how about an orange fruit flan?

They are lovely in a traditional trifle. Line bottom of dish with sponge [I use slices of victoria sponge] spread with jam, pour manderins on top [with juice] sprinkle with sherry [optional], cover with layer of custard [I make real custard, 3/4 pint milk, 2 eggs, 1 oz cornflour, 1oz sugar into pan whisk together, then heat slowly until jusy below boiling point, stirring with a wooden spoon, until custard coats the back of spoon, be careful not to boil as the custard seperates. Leave to cool slightly then pour over the triflr base. When cold top with whipped cream, decorate with toasted almond slicec [optional]0

Mandarins are also very nice with cottage cheese for a light, low-calorie lunch. I second the florida-salad and the trifle ideas0

Put them in a sponge flan case with orange jelly, cover with melted chocolate and you have a giant jaffacake!0
