    how about stuffing and rolling up coating in tomato sauce and baking? kind of a canneloni dish, i think the stuffing can be same as lasagne or maybe spinich and ricotta would work

    edit, meant to say if they are fresh this is easier, other wise would need to soak them til they are bendable

    You can break them up and use them as 'normal' pasta if you want. They don't look as pretty, but I've done it before when I've run out of pasta shapes.

    Or you could do different types of lasagne - it doesn't have to be the usual mince filling - you could use just about anything you would do as a pasta bake and it would probably be good.

    If they are fresh, cut them into thin strips a la tagliatelle.

    boil a bit until softish, cut into triangles, use an oil spray to spray them liberally, sprinkle with salt/pepper/chilli/cumin whatever you like and cook until crisp in a hot oven - great lowfat dipping crisp
