Ricotto cheese...what can I do with it?

I bought ricotto cheese from Tesco today.

I intended to buy mascarpone but the ricotto was half the price of it.

I have never cooked with it before, although have had ricotto ravioli before.

So what can i do with it? Can I just make a bog standard cheese sauce and mix it in? :confused:

    We've just had spinach and ricotta canelloni for tea, its the first time we (me and DD) have made it ourselves, it was delicious.
    Let me know if you want the recipe, havent checked the link brokenwings has given you yet, I'm thinking there will be a recipe for canelloni on there though,

    Have you looked on the underside of the lid? It's been ages since I bought any, but the last times it had the recipie for the canelloni - and it was lush!

    Someone burst my bubble and I lost the plot so no idea what I spent now... :(I will try to work it out.

    Heres how we made the spinach and ricotta canelloni:

    250g tub of ricotta
    4 blocks of bonduelle frozen spinach (no batteries in scales to weigh spinach)
    tubes of canelloni, (we ended up filling 11)
    mix spinach and ricotta together, add pepper to taste, and fill canelloni tubes, arrange them in a buttered ovenproof dish. I poured over a tin of chopped tomatos to which I added crushed garlic and italian herbs and a little tomato puree. Top with cheese, we used a strong cheddar and some parmesan, cover with tinfoil and put in pre-heated oven (220 for my oven) for 20 mins, remove tinfoil and put back in oven for a futher 10 mins. We had crust bread and salad with it, delicious.

    I'm not bulchy so I hope she doesn't mind me butting in :) I fill cannelloni tubes with a teaspoon, takes ages and the pasta tubes often crack when I'm trying to stuff them :rolleyes:

    Haven't been able to buy cannelloni tubes in my supermarket for years so improvise with fresh lasagne sheets which I roll up round the filling - lots easier in my book!

    The one thing you can't do with it successfully is make a sauce as you originally asked, it doesn't melt. Thanks for the link to all those recipes brokenwings.
    My own favourite is a filo pie filling consisting of fried onions and garlic spinach riccota toasted pine kernels thyme and egg.

    What about one of those muslin bags with the spout that chefs use for making cream puffs etc?
