help for tonights tea !

I have a lot of broccoli that needs using up, and I have a tin of corned beef . What can I do with them ?

    I quite often have a baked spud with beans & steamed brocolli on the side & it all goes together quite nicely!

  • how about broccoli soup? when i make leek and potato soup i sometimes crisp up some bacon bits and put them on top - maybe this would work with corned beef?

    or if you have potato's how about corned beef hash with broccoli as a side.

    maybe you could blanche and then freeze some of the broccoli?

    Tell me how to make corned beef hash please? I have steamed the broc already. (horrible stuff LOL) I do have tins of beans... I have potatoes. I am desperate :)!

    I haven't had corned beef hash in ages. I'll have to slot it into my meal plan at some point now. :think:

    The way I make it (as taught by my dad) is to parboil potatoes until just tender, then cool and chop into rough cubes. Roughly chop some onion and fry until soft, then add the chopped potatoes and fry some more, until the potatoes and onion is golden. Add some cubed corned beef and some seasoning (my dad usually adds some chilli at this point, too, but then he adds chilli to most things (as do I, actually :o)), and fry until everything's hot and crispy.

    You could try panacalty (pan haggerty), there's loads of different ways of making it but I slice & fry an onion, add some chopped/cubed potatoes, cover with water and boil for about half an hour. Slice the corned beef and add for the last five minutes. Add salt & pepper and give it a stir just before you serve it and the corned beef will break up. It's one of my favourite quick comfort meals and I love to dip buttered crusty bread in it. :drool:

    How I make corned beef hash:

    Boil some potatoes & mash them.
    Fry some sliced onions (and mushrooms if you like) until soft.
    Fork mix the corned beef until it's all broken up and stir into the mashed potato. & add fried onions/mushrooms.
    (At this point, mix in your chopped steamed broccoli).

    You can eat it at this point, but I like to turn the mixture out into a non-stick frying pan with a smearing of oil and fry it until the potato has crispened up on both sides. It will probably break up as you turn it over but that doesn't matter.
  • I would serve the brocolli with a cheese sauce and make a corned Beef and potato pie

    :D I cooked the onions, the pots, the broc, and cut up the corned beef and threw it all in the Remoska . I am working up the nerve to go and look at it now.:eek:

    So... how did it turn out? I've never used a remoska so I don't know what to expect - I hope it was good, though!
