I'm looking for a foolproof choc chip cookie recipe. Recently I have tried a number of recipes from the net and they all see to be a cross between a cake and a biscuit, but not in a good way, they are too crisp at the outside and too soft in the middle. I'm not interested in an american style soft, chewy cookie but just a decent crisp choc chip cookie/biscuit.
Any help would be most gratefully appreciated, I'm normally a pretty good baker but seem to be hitting a wall here!
Thanks for your help ;-)

Be-Ro cookbook. Small recipe book produced by Be-Ro Flour and has been around for decades with very little change. Small but absolutely packed full of fantastic recipes that always turn out fantastic! You can pick up a copy in your local Co-Op for about a pound but all the recipes are on the website and the chocolate chip cookie recipe is here.
