  • Why not just have slices of bread with the stew. I have done this when I have been short of potatos, lovely for mopping up the juices.

    If you get an onion and a couple of potatoes, slice them fairly thinly (about the thickness of a pound coin), then layer in a dish. Layer of potatoes, layer of onion, layer of potatoes etc. Make up some stock and pour onto the layers. Bake in the oven for about 40 mins.

    Hi i cooked one of the chicken's last night, and i have about 2/3 chicken left over .. i also have 1/2 my ham cooked on the weekend left and im starting to think it needs eating.

    Can anyone suggest something i can make with the ingredients above, hopefully something i can make a double/triple portion of and freeze as i figure the meat+chicken is enough for at least 2-3 meals.

    I was thinking perhaps a pasta bake as im now out of potato's but i have no idea of how to make a sauce from scratch, or maybe even pie but again, i have no idea how to make a filling??

    Anyone?

    The pie filling I usually make with leftover chicken and/or ham is based on a white sauce, and is really easy. All I do is fry a chopped onion in some metled butter or oil until soft, then add a couple of large spoonfuls of flour (plain or self raising - it doesn't seem to matter which) and cook for a minute or so. Then add milk - a splash at a time at first, then larger quantities until you have the right amount of sauce. Keep heating until it starts to thicken (although it's best not to let it boil as it can go a bit funny), then add your chicken / ham and any seasonings or herbs you fancy.

    This is also nice served with pasta, in which case I often add mushrooms at the same time as the onions, so it would probably be a good pasta bake too. (I'll have to try it sometime, now I've mentioned it. :think:)

    To make a white sauce, I put a couple of dessertspoons of flour and a slice of butter (about 1cm thick) into a pan and heat up. When the butter melts, mix the flour into it and keep stirring on the heat for a minute or two.
    Next, add a splash of milk and stir into the flour/butter mix until it's absorbed. Keep doing this until a pint of milk (or half milk, half water) has been used. As long as you add the milk slowly and keep stirring it shouldn't get any lumps.
    Add some salt and pepper and if you want a cheese sauce, add some grated cheese and mustard.
