I Have A Jar of Sundried Tomatoes in Oil...

Just found them in the cupboard - expired 31/1 but am assuming would be ok to use.....? But what in? Any suggestions gratefully received, I have well stocked cupboards and freezer, bought them on a whim and really fancied them but am now clueless, thanks in advance.
I'm not a failure if I don't make it, I'm a success because I :tried!

    Yum - one of my favourite things....chop up small and use in EVERYTHING - bolognese sauce, tuna pasta bake, veggie soups, especially tomato, any sort of casserole, cheese scones, savoury cheese biscuits, vinaigrette, or mix with cream cheese or cottage cheese (or grated cheddar etc) for nice sarnie filling. Use the oil in cooking (or vinaigrette - tho perhaps not in this weather). Or do what I do and stand in the kitchen eating them straight from the jar - yum.
    (Though I am a tomato addict)
  • Vegetables preserved in oil take a very, very long time to "expire" and that date is the "best by" one which denotes the product cannot be guaranteed to be in prime condition after that, not that they won't be any good so there's no particular rush to use them up.

    I use them in any recipe which requires tomatoes to be cooked, so pasta sauce, soups, anything like that. They're particularly good sliced finely on pizza as well, especially with artichokes.

    I also like them cold out of the jar with a mozzarella and avocado salad.

    I use them in a butternut squash with rice, sage and goats cheese. Cut squash in half lenghtways and roast in the oven until tender then scoop out the middle. Meanwhile cook rice in stock, keep adding stock until absorbed and rice cooked and add sage if using dried. chop up SD tomatoes and add to rice and squash. pile back into squash skins and top with chopped up goats cheese (can add throughout as well). Bake for 15 -20 mins until melted. Yum

    Hi Alwayshappy,

    I use them to top pizza, in tapenade or sometimes in salads. They're great, chopped finely in homemade bread too.

  • I use them to make sundried tomato and parmesan bread - lovely
    As others have said you can use them in anything that calls for tomatoes just remember that the sundried have a lot more depth of flavour and a little goes a long way

    Was going to suggest bread, but have never added parmesan! That sounds yum as the sundried tomato bread is good, but that would be amazing!
