morning all, I wonder if you could assist in a cake ingredient dilema. I am doing a version of the storecupboard challenge and have found masses of prunes (must have bought them for rabbit and prunes) anyway does anyone have a killer prune cake recipe good for lunch boxes. I've had a quick scope through the search but not quite finding what I want

Chocolate Prune Cake
1 cup pitted prunes cut up
1 teaspoon baking soda
1 cup boiling water
1 cup butter
1 cup sugar
2 eggs
1 3/4 cups flour
2 tablespoons cocoa
Preheat oven to 350 F. Prepare a bundt pan. Sprinkle soda on prunes. Pour boiling water over and allow to cool. Cream butter and sugar in food processor. Add eggs. Add prune mixture and whir about 15 seconds. Add flour sifted with cocoa. Mix till blended with on/off motion. Pour into pan. Bake 45-55 minutes. When cool, turn out. Sprinkle with icing (powdered) sugar if you like.

Grandma Iny's Prune Cake from The Pioneer Woman
Canola oil is rapeseed oil, but I'm sure any bland vegetable oil will do. I'd use golden syrup for the white syrup, but maybe for lunchboxes you will want to skip the icing.0 -
In last week's guardian, Hugh F-W substituted, in an apple cake, half the weight of apples with prunes. Looks yummy :j Recipe here
