I've made pork and apple sausage-balls/rissoles for tonight and I'm cooking them in the oven a la Delia/Sian. It's a long time to have them in the oven (1 1/4 hours by Delia's reckoning) but I'm doing baked potatoes with them so the oven would be on anyway. the advantage of cooking them this way is that I can leave them and get on with other things.
I've used 375g sausage meat, 75 g chopped onion, 100g grated apple, 80g breadcrumbs and one egg. I added a little flour to some of them to see how they compare. the mixture was sticky but held in a rissole shape. It's made 11 tablespoon size balls (should have made an even number shouldn't I?)
will report back later as to how they cooked and importantly how they tasted!

if we decide to de-egg the fritters we can have HM mayo with the falafels and maybe a HM flatbread, how does that sound to you all?
Me thinks you could be right - I bought 1 bottle of oil on saturday and with carrot cake and other bits of cooking I am already low on oil - Shirley would only be 3 days into her month.

verdict on sausage patties!
they were very yummy - I could have greedily eaten twice as many! but seriously, I think next time I will try and pad them out further. There was no taste difference between the ones with or without flour, and I could have got away with adding more flour. Next time I will try some more onion, some more apple and some oats too. we all agreed it was something we would like to eat regularly. they'll be lovely in the summer with grated courgette and lots of herbs...mmm.
the apple and onion sauce was very nice and boosted the F and V content significantly. I made the sauce with 2 apples and half an onion - if I'd made more it would have been eaten.
scores: me 10/10
DH 8/10 (because he doesn't like the cheap sausagemeat)

Portion wise, I was full up afterwards (as I had a big baked spud) but the meat looked a bit small. maybe if I made burger shapes rather than balls it would have given the impression of more meat? they just looked a bit small on my plate.
It was a very easy recipe to make - the girls said they'd enjoy making them with me next time. Because I cooked them in the oven it wasn't too much "faff" (to quote Ceridwen!);)weaving through the chaos...0 -
After spending about £50 today, in Mr T, I am decided that I must go back to having my shopping delivered as then I cannot impulse buy. I have copied the excel sheet, to keep an eye on the various meals that you have suggested. I have to reduce my food budget as DS has moved out, and there is only DGD and myself now. But I still keep buying as if the family was here. My freezer is pretty full. So I should really work my way through it.But I keep buying more whoopsies???
If the menu plan is for a month for a family of 4, then I will have to make it last me for two months? Thats going to be amazing if I can do that. It will mean I could possibly keep my car on the road after all. As long as I dont go out in it everyday. But living 7 miles or so from the nearest shop etc etc I need a car.
I shall be making notes and getting ready to follow properly, as soon as I can use up what I have in stock.
Now I have to find the time to go back and read all the pages in the middle.

Hi everyone I am delurking after [STRIKE]trying to keep up[/STRIKE] following this thread for a couple of days.
I have just made Aless02's spinach and lentil soup from post#107.
It's yum and my OH thinks so too. Nice filling luch with 1 slice of HM bread and very very easy to make.
I also have a cookie recipe to offer. I was thinking about leftovers and how important it will be for Bob and Shirley to find ways to use them up. I our house we eat tons of fruit but still there are always a couple of apples left over at the end of the week.
I do 3 things with them 1) make apple braid 2) make baked fruit- applesand or pears with cinnamon and nutmeg baked in orange juice and 3) soft apple cookies
I now live in Canada, so I'm afraid the quantities are in cups, but that might not be a bad thing for bob and shirley if they have limited cookware.
Also, it means I cant cost stuff for you. Food here is eye wateringly expensive and people in Bob and Shirleys position might end up registering at the food bank for food handouts.
Anyways, recipe: ( I think everything except the cinnamon is on the shopping list)
2/3c butter ( or what have you)
1c packed brown sugar ( white works, so does sugar substitutes for my diabetic OH)
2 eggs
1/2c sour milk ( sour milk by adding 1 tsp vinegar to 1/2c milk)
2 cups rolled oats
2 cups plain flour
1 tsp baking powder
1/2 tsp baking powder ( I omit this)
1/2 tsp salt
3 tsp cinnamon ( or similar spice)
3 large apples, grated inc. skins
preheat oven to 400f grease or grease proof paper 2 sheets.
cream together the butter and sugar. Add eggs, one at a time beating well after each addition. Add milk and then oats, blend well.
In another bowl, sift together flour, baking powder,baking soda ( if using) salt and cinnamon. Grate apples into their own bowl and sprinkle with 1/2 c of the flour mixture. Add flour misture to oat mixture and then add apples and stir well. Drop tablespoonfulls onto the cookie sheets.
bake for 8-10 mins.
This makes 4 dozen. They stay soft and should be stored in an airtight container. We have found they go off quickly so I usually freeze most of a batch and remove a few at a time, they freeze well.
The recipe is from my stepdaughter's elementary school fundraiser cookbook, so thanks to Anna :-)
On another note, here they seem to substitute apple sauce for the fat in baked goods quite often, I dont know if someone would want to try that with all or some of the oil in the carrot cake to help preserve Shirleys oil supplies.Eat food, not edible food-like items. Mostly plants.0 -

sounds lovely! anchovies will go into the pasta puttanesca. blackberries will add to the all important purple food category. just maybe not in the same dish...weaving through the chaos...0 -
