When thawing fresh yeast 2 1b loaves Help plz

Hi frugallers, I have been thawing my frozen 'fresh' yeast overnight in the firdge in a little cold water. I took it out of the fridge this morning and it seems to be already 'coming to the top' of the water, so should be working OK. I have two questions for you lovely lot:
1. I want to make two loaves and have about 1 and half ounces of yeast in the jug. Do I need to take a little out so that is doesn't over-rise or result in crumbly bread?
2. Can someone give me a quick recipe for two loaves half white, half whole-wheat loaves using fresh yeast please
3. Can someone be quick as my daughter is coming round in half an hour and I'm teaching her to make bread with fresh yeast:rotfl:

Looks like it might be too late but Delias recipe can be made as half white half wholemeal/granary . Hope that helps. Just measure out the right quantity of yeast for the loaves and store the rest

Also, don't worry about warming flour. Waste of time
A little nonsense now and then is relished by the wisest men :cool:
