Help wanted PLEEEEASE:eek:. I am making apple crumble and custard for 120 tomorrow night!!! Am now really worried about quantities. How do I work out how much I need to do. I made 6 kilos of crumble mix last night. How much apple?? I know its not OS but thought I might use cartons of custard - how much is one serving?

I read your post and remembered I have a cookery book by Jeannette Orrey called The Dinner Lady (Jamie Oliver was involved in the whole school dinner campaign).
There is an apple crumble recipe in and it gives quantities for 4 and 96 people
I don't know if it works as I've not used this particular recipe
Serves 96
9kg (20lb) Bramley apples
12 lemon or oranges
225g (8oz) caster sugar
Crumble Topping
2.7KG (6lb) plain flour
1.3kg (3lb) butter or margarine
900g (2lb) demerara sugar
and recipe just in case you want to see it
Preheat oven 190 / 375 / Gas 5
Peel, core and slice the apples. Cut the rind of the lemon or oranges into pieces. Put the apple and rind into a saucepan with a little water, and cook over a low heat until soft. Remove the rind. Add the sugar to sweeten, and put in an ovenproof dish.
For the crumble topping, sift the flour into a bowl. Cut the fat into cubes and rub into the flour until the texture resembles breadcrumbs, then mix in the sugar. Spread the crumble evenly over the fruit. Bake in the preheated oven for 35 - 40 mins until lightly browned.

The recipe is great as I sometimes do large quantities for church events, thanks for that. My son loves crumble and although now an adult when they come for Sunday lunch he always requests apple crumble. Sometimes I add coconut, pecans, walnuts or oats to the mixture, not all 4 just 1 choice usually. I also like using some form of brown sugar with mine.Nothing Changes if Nothing Changes0

Hi, the above recipe is perfect! Regarding custard I regularly used to feed 20 for a week, and found 3 x 1litres of custard fine. A good idea is to buy some sachets of instant custard powder (you can buy them in large packs if you have access to cash and carry) as a quick fix in case you need more.
