we eat a lot of pasta too and i've recently been buying the tesco one as its certainly improved a lot and also says on the packet that it's "authentic italian pasta made in Italy from durum wheat" so maybe the change in manufacturer is the reason why. wouldn't touch the value pasta with a barge pole though ;)

Okay, all you Italian girlfriends! Do you have some recipes for really authentic tomato/bolognese sauce, just the way that 'momma' used to make it?

Only too happy to oblige ;)

The way my own mamma makes her simple tomato sauce: get a large quantity of ripe tomatoes (on the vine are the best - check local fruit & veg market for non rip-off supermarket prices!), chop them up in quarters and scoop out the seeds, Place in a large pan with a very small quantity of water (we're talking a couple of tablespoons), an onion cut in big pieces, a handful of fresh basil, salt and pepper. Cover and cook on a very low heat until it turns into mush.

Then you'll need a mouli (like this). You need to put in your tomato mush, a couple of ladlefuls at a time, and work the mouli to get all the juices and pulp out and separate the skins.

And hey presto, you have your home-made tomato sauce that, if your tomatoes were good, will always taste much better than the shop bought stuff! To use it with pasta, you want to simmer it gently for a few minutes with a tablespoon of olive oil (for 2 people).

Hope this helps - I'm sure others will pipe in with their bolognese recipes, I've been told that mine is a corrupted version because I like adding chopped mushrooms! :o

Hi Cristy unfortunately I don't have a Waitrose near me only Tesco,Asda and Lidl (that's where I buy my parmesan cheese from).
Yes I think I will give Tesco pasta another go and see how it goes.:D
I made my own pasta once and it came out quite good :it's really easy to make even though I don't think I am using the right type of flour but I made ravioli stuffed with mushrooms and they came out quite nice:j
and yes i confirm I am a bit of a snob when it comes to pasta and I really don't like overcooked pasta.I have tried several italian restaurants around where I live and have come to the conclusion that most of them cook for british people i mean they cook italian food like british people like it and not how italian people would.what do you think?
