    I did wonder if it was tomato puree or perhaps more like passatta.

    Ive just made a lovely sticky sauce , and its dead simple .


    2 heaped Tbs of honey, 1 clove garlic, 1 chopped chill, a good dash of soy sauce, mix together . Voila......:D

    I love ribs, I cook them in the slow cooker with a little water first then baste them & grill/oven cook them. The meat falls of the bone then.

    There was a rib recipe on Hairy Bikers last week - think will have a look see if I can find that one.

    Hi

    I start with Chinese hoisin sauce, add tomato ketchup, dijon mustard and sometimes some sherry or soy sauce.

    Bake in the oven covered with foil and then take the foil off for the last twenty minutes until the liquid has evaporated and the ribs are browned.

    I went to an evening class taught by a chinese lady and she said that the best thing to do with ribs was to gently boil them in water or stock for 45 minutes first before marinading them.

    When you then paint on or dip in your sauce however high the sugar content you only have to worry about looking after the sauce and making sure it doesnt burn and browns to your exact requirement. The ribs are already cooked and melt in the mouth tender. You just dont have to worry about them -ie 10 minutes under the grill on high turing once is ok.


    Had many a compliment on this very simple technique.
