HELP MS Vegetarian Meals Needed

Hi I have a friend coming to stay for a weekend who is a vegetarian. I am on a tight budget, suffering from depression and not very confident in my cooking abilities:(

Can anyone help with meals for a weekend (Fri to Sun) plus recepies please. Thanks for your help:T:T

    Make a chilli with tinned mixed beans from the supermarket instead of the mince, i do this a lot anyway as i think that veggie chilli is nicer than the meat version.

    If you like it and decide to keep making it then graduate to the mixed beans that are dried in a packet and use those after soaking and boiling them as it works out much cheaper.

    Another option would be a veggie cottage pie with quorn mince or even quorn mince with the chilli.

    HM pizza too.

    Cauliflower cheese with hm spicy wedges would be another option, OO i`m making myself hungry now :drool:

    Veggie bolognaise is so easy, just use soya or quorn instead of mince. I used dried soya mince which is soaked in boiling water before adding to your sauce as it's much cheaper.

    What about quiche - will keep for lunch for the next day too - cheese and broccoli?

    Nice thick vegetable soup and crusty bread

    cheese and potato pie - layer mash with strong cheese and top with cheesey breadcrumbs - recipe on bbc website from the hairy bikers latest series - serve with salad or baked beans

    Jacket potato

    cheese, veggie burger or egg with salad

    veggie sausage, mash and veggie pnion gravy (bisto is ok).

    Really simple but favourite veggie meals of mine:

    Baked potato with a nice salad and a few dippy things like hummus or tzatziki

    Pasta in a basic tomato sauce with some creme fraiche stirred in, plenty of black pepper. Or pasta with pesto stirred through.

    Another pasta sauce whic is cheap and easy to make is a mushroom/leek/cream cheese sauce,
    chop and saute an onion and clovev of garlic
    add few handfuls chopped mushrooms to the pan
    add 2 chopped leeks
    cover with veggie stock
    bring to boil then simmer for 20 mins until stock is reduced and stir in the cream cheese (check it's veggie)

    Baked risotto:

    In a baking dish put plenty a few glugs of olive oil, 5 handfuls of arborio rice, one chopped onion, one chopped up red pepper, a few chopped up mushrooms, half a chopped up courgette. Give a nice stir and cover with veg stock (about 2 cm over the top of the veg).
    Cover and bake at 190 degrees for about 20 mins, checking stock levels and topping up as required if rice is drying out before cooked.
    When rice is cooked stir a bit of butter through and top with veggie cheese of your choice.

    This might sounds very obvious but if making HM veg soup remember to use veg stock :rotfl:

  • Thank you thank you thank you. I would have replied sooner but I can never find my posts!! Any ideas on how I can remember where I have posted would also be greatly received ha ha.

    hey french,
    hant seen the post till today, buy Im a newbie!

    Any sort of veggie crumbles. Use what veg you have and always start with gently frying onion and garlic then add what you have, fry gently, then cover with stock. once almost cooked, move to dishes and top with savoury crumble (butter rubbed into plain flour with a pinch of salt) sorry I dont have measurements, I just add butter and flour till it crumbles and resembles breqadcrumbs. top the veggies and bake for 20 mins, can be reheated.
    I also do roasted butternut squash and stilton risotto - roast the squash off, let it cool and flake it with a fork. When ready to serve, reheat your risotto rice (I pre under cook it, cook it with garlic, white wine and veggie stock to start with) add a slug of cream, your squash and some stilton to melt in. 5 mins done. tastes stunning.
    Also honey roasted med veg pasta. I honey roast (that mean chop anythign you have, onions peppers, red onion, courgettes etc.chuck in a roasting tin, sprinkle with brown sugar and honey, whole un peeled garlic cloves, salt and pepper) and leave them to do their thing for 45 mins roasting)
    let it cool, freeze it, do whatever, but when you want to use it, boil up some pasta, or use pre boiled from fridge, add the veg, either freshly roasted, or defrosted, a bit of tomato paste, and mix it all in, its a non microwave reheat!
    I also do goats cheese, tomato and red onion tarts, and mushroom, stilton and walnnut tarts the same way. Pre bought pastry, rolled out, put in cases, filled with whatever, and baked like quiche without the egg!
    baked eggs with herbs - crack an egg into an oven proof ramekin, top with cheese, onion, and herbs (whatever you have, I sometimes put slices leeks and a sollop of cream under the egg) bang in oven and pour some wine, 15 mins later literally take it out and eat it (this is veggie not vegan as are most of my suggestions!)
    stuffed mushrooms, fill them with cream cheese mixed with herbs and topped with more cheese them bake them in the oven. get a tin of mushy peas, shape them into patties, panni them with flour / egg/ breadcrumbs and fry for a cheap munch.
    so many thoughts... pours more brandy....
