Recipe Idea's - Brocolli & Asparagus

hi,

I am looking for some idea's.

I have a 'head' of brocolli, a bunch of asparagus spears, lots of carrots, a green pepper. There's also a fair few condiments etc in the cupboards.

Any idea's for something to make?

  • Hmmmm, I'm not sure that lovely asparagus really needs to be accompanied by anything else except perhaps by some lovely Hollandaise. A perfect starter

    I made some lovely spicy carrot & lentil soup last week. Just finished it off at lunchtime today. I used a tablespoon of red Thai curry paste to spice it up. Delicious!

    Broccoli makes nice soup too - especially if you've got a bit of blue chesse and some cream or creme fraiche that needs using up.

    a veggie lasagne


    mash up the brocolli with garlic and onions,, thats one of your layers

    the carrots can be very finely chopped or grated with chopped tomatoes to make the bottom layer

    char grill (under a hot grill) the asparagus with olive oil, thats the 3rd layer with some parmesan

    the brocolli is even nicer if you mash green pesto in with it

    Simple and quick: chop broccoli into florets and asparagus into 1 cm pieces (can use lots of the stalk too!), fry some chopped garlic in olive oil and some chilli flakes if you like spicy, add broccoli and let it sautee with a splash of water with a lid on until broccoli is nearly cooked. Add asparagus for the last couple of minutes (cooks quicker than broccoli). Meanwhile cook some pasta. Use veg to dress pasta and sprinkle with parmesan or, even better, pecorino cheese.

    Edited to say: chopped sauteed asparagus is a lovely filling for an omelette, you could do that and have steamed broccoli in oil and lemon dressing as a side dish.
    Finally I'm an OAP and can travel free (in London at least!).

    Broccoli cheese (like cauliflower cheese)
    Carrot and cheedar cheese soup, or any other carrot soup

  • Cut up small and steamed, then added to quiche mixture.

    Omelette.

    Asparagus by itself with a poached egg.

    Veggie curry.

    All in Arabiata sauce and pasta twists.

    I risotto. Chop the veg into small pieces and mix with the rice, coat in oil and then add stock spoon by spoon until its absorbed and keep doing that until the rice and veg are cooked. Sprinkle with parmesan and eat.

    Could do similar with pasta and cheese sauce and bake in the oven.

    I would probably do stir fry with those ingredients, especially if you have some left over meat or bits of chicken.

  • Salmon steak baked in the oven served with Asparagus spears and a veg Ratatouille add a some new potatoes, Garlic puree and a small can of chopped tomatoes and some mixed herbs (or spices / Chillie if you fancy a sizzler).
    Failure is only someone elses judgement.
    Without change there would be no butterflies.
    If its important to you, you'll find a way - if not, you'll find an excuse ! ~ Easy to say when you take money out of the equation!
