I have found this at the back of my fridge from christmas, still in date. Has anyone got any recipe suggestions to use it up.

It is lovely if you use a small piece mixed with quark. It is very low fat for a dip with crunchy crudites. I've never used it to cook with though!0

Oh what about broccoli and blue cheese soup?

I love blue cheese melted over a beef burger - best in a bun with some salad - mmmm! :drool:
It's also nice stirred into hot pasta with something green (brocolli, spinach or similar), some chopped walnuts and lots of black pepper. It's simple, but very tasty!Back after a very long break!0 -

Blue cheese souffle?
Sounds posh but is very cheap to make if you already have the cheese in.
We like blue cheese on top of steak or stuffed inside chicken breasts (wrapped in bacon).0 -

this recipe is for blue stilton - but would guess it would travel well!
filo pastry
blue cheese
some cherry tomatoes or I have used chopped ripe tomatoes
basil leaves
cut up filo pastry into squares which fit but overlap a bun or muffin tray.
oil the tray and the squares of pastry
put a few squares into the bun depressions oiling them lightly
fill with the crumbled cheese and a basil leaf and top with tomato either half a cherry or chopped ripe tomato
bake in hot oven for about twenty to twenty five minutes
they taste sensational!0 -
Beef or lamb mince, beef and pork, veal mince/whatever
Grated onion
Pepper
Breadcrumbs
Egg if not much mince
Let mince get to room temperature (cold hands otherwise)
Mush up until soft and squishy.
Shape into patty in palm.
Poke middle with finger.
Put lumps of Danish Blue in there.
Cover up with mince/make ball/flatten.
Cook.
Serve with salad and a little mayo with some more Danish Blue bashed about with a wooden spoon.
