Uneaten Christmas cake

My mother-in-law makes us a huge Christmas cake each year. Unfortunately, I really dislike Christmas cake, any fruit cake in fact, but haven't the heart to tell her. DH likes it but not enough to eat it. Usually we manage to give it away but it didn't happen last year. Any ideas what I can do with it before the next one arrives? Much as I dislike it, I hate to see it go to waste!

If it's still edible, can you turn it into refrigerator cake, with crushed digestives, glace cherries, coconut, chocolate?The ability of skinny old ladies to carry huge loads is phenomenal. Xmas cake lasts for years. I would re-cycle it
to this year's little treats.
Mini Xmas Puddings
400g fruit cake (MIL
:D)
100g milk chocolate buds
pkt white chocolate buds
30g copha
60g butter
coloured or red glace cherries
rum or brandy essence or the real stuff
Crumble cake in a meduim sized bowl.
Melt milk buds & butter in double boiler.
Add the essence & mix well.
Quickly roll into balls, place on tray and chill for 1/2 hr.
Melt white buds with copha over slow heat. Cut cherries in half.
With a teaspoon, decorate the tops of the puddings with the white chocolate & place a half cherry on top of each one.
These are lovely & a cheapy fruit cake is good too. Sorry about the grams, you may have to convert to oz.Don't worry about the world coming to an end today. It's already tomorrow in Australia.

I like the sound of that, presumably I'd crumble the Christmas cake? Or should I slice it and sandwich the other ingredients? How would I get them to bind? Sorry for the ream of questions, I've never come across refrigerator cake before!whiteguineapig wrote:i'v never had this problem

I like the sound of that too. My MIL's cake is HUGE so I think I'll try both yours and wigginsmum's ideas. Nice treat for DH's packed lunch, also as hostess gifts etc.

We decided not to have a Christmas cake last year as we couldn't face it after ploughing through the remainder of our wedding cake but then got given one by my husbands brother. He was given it but couldn't eat it because of his and his girlfriend's allergies. In the end we took it with us to a party and it went down a treat. Another alternative is to give some to someone with a few children who'll eat anything.0

You could crumble it up and mix it with a tub of cheapo vanilla ice cream, then put it in a couple of big pudding basins and back into the freezer to make a couple of Christmas Cake Bombe -type things. Still tastes christmas-cakey but nowhere near as rich: I sometimes do this with the Christmas cake OH gets as a prezzie from work each year. You could add some brandy if its for adults!0

Like a cheesecake base, you could mix the crumbled bits with melted butter, press into a tin and bung everything else on top.
