company wants tax returns

The employer is making an unwarranted intrusion into your privacy. You are not obliged to provide the information they are asking for and unless everyone else, from the cleaner to Managing Director, has to supply the same details they cannot take any action against you if you refuse (which is what I would do in your circumstances).
EDIT
Either that or go to the HMRC web site, print off forms for the relevant years, and fill them in as best you are able from memory. No-one will know they are not the actual ones that you submitted to HMRC as they are not receipted by them any longer.0 -

They may also be breaking the Data Protection Act?0 -
Hi,
They are doing a CRB too, I'm just going to ask the tax for copies or just make it up roughly from memory no way they can check them is there?0 -

Are you registered online with HMRC? If so, will they accept the statements printed from your online account?
It seems odd to ask for tax returns but I would guess they've asked for these as there is other financial information not available. Try to speak to the right person who can explain what it is they want to see i.e. proof of ....?
BTW - Google "employment screening" to see what kind of screening services are offered to employers as this will show you the kind of evidence they're trying to gather.Warning ..... I'm a peri-menopausal axe-wielding maniac0 -
you can get them from your tax office that you send your returns to i think. i needed three years for a mortgage application. they send you a sheet for each year that basically says what your taxable income was and the tax you paid from what i remember.
that said, i can't imagine why they want this. unless it is to gauge or confirm how much experience you might have? Those who will not reason, are bigots, those who cannot, are fools, and those who dare not, are slaves. - Lord Byron0 -

how odd. maybe they've had problems with people not declaring income and claiming benefits? i'm self employed but tend to only have a few companies i work for in each tax year, all of whom require my unique tax reference and declare their payments to revenue. Those who will not reason, are bigots, those who cannot, are fools, and those who dare not, are slaves. - Lord Byron0 -
Why does your employer need to know how you supported yourself before you started working for them?"You were only supposed to blow the bl**dy doors off!!"0
