Hello everyone, first time for me to join you on this board so i h0pe you dont mind me popping in!
Basically ive got some veggies that i need to cook and was wondering if anyone had a tasty recipe for me. Im a bit fed up of my veggy soup now!!
So ive got Potatoes, Suede, Parsnips, Onions and some Mushrooms to get rid of.
Any ideas please. Thanks x

You could oven roast them? Par-boil the potatoes, swede and parsnips for 10 mins. Have a roasting tin heating up in a hot oven with some olive oil or goose fat, toss the veg in the oil and put back in the oven. Add the onions and mushrooms to the tin later (20 mins before serving)0

Potatoes, swede and onion. Together they make a very good vegetable curry.
Also curried mushrooms, with a small amount of onion.

i would say you could do a yummy veggie curry with the pot swede and the parsnip i got a 9p curry sauce in sainsburys which was pretty good with veg
or you could do a risotto with mushrooms and onions
sweat onions in a casserole dish slowly until they are clear in butter add the mushrooms and sweat those too add some garlic if you have any
make up a pint of stock (stock cubs and boiling water)
add 150g of risotto rice
pour in the stock cover the dish and bake in the oven for about half an hour or until all the stock has been absorbed and finish with some parmesan if you have it
ooh or what about making some bubble and squeak? Boil up the root veg and mash down shape into cakes and toss into a little flour or semolina and fry for a couple of mins each side to make them crispy yum served with eggs and bacon!

I'd get some minced beef and make a cottage pie. Put the onions and mushrooms with the meat, and make mash with the root vegetables!Less is more0

Another vote for cottage pie. Apart from the potatoes (which will probably keep well past their use by date if stored somewhere cool and dark) the rest will freeze well to use another time.

Thanks all. Went with the veggie curry. Had some curry powder and other bits in the cupboard. Looks and smells ok, will let you know how it tastes.
Veggie Crumble?? Intrigued!
Did I mention i was a veggie? Sorry don't think i did. DH isn't though but doesn't mind the odd veggie dish now and again.
