How long does mayo keep in fridge?

I was in costco a couple of weeks ago and bought two enormous jars of Hellmann's light mayonnaise. I opened one jar and have been keeping it in the fridge but it has gone quite yellow looking and there is some "juice" stuff on the top of it. Should I sling it and how long should it keep for once opened?

    Hiya

Have just checked a jar I have in the fridge and it says to consume within 4 weeks of opening.

Well I am just eating a salmon and mayo sarnie (Morrisons bettabuy mayo -45p) - it has been in my fridge for so long I cannot remember when I bought it (originally bought as I read you could condition your hair with it).

It tastes fine, but if it makes me ill, will let you know!!

Is that Simon Mayo - the DJ?

If he's got yellow stuff oozing from him I'd bin him - DJ's are 10 a penny - not worth risking your life over him.

(Worth checking your fridge temp too!)

Could have gone off - does it smell off (sort of oily musty smell)? I found that happened with a jar of Hellmann's too; made me wonder if it's something specific to catering jars of stuff - I never find that with normal jars.

I made some mayo from egg yolks and olive oil, with some garlic, mustard and vinegar, about a fortnight ago. I'm a bit concerned about it really, raw eggs and all that, but I can't bear to chuck it out yet. OH won't touch it, probably very sensibly, but it tastes very good!

I use Light or Extra Light and it's never gone yellow, sometimes I keep it for a few weeks and sometimes for months, sounds suspect to me too.

Sometimes it's better to buy smaller jars of stuff like mayo and sauces because they can go off and then you've wasted your money. If I can't freeze something I buy a small version.
