Inspiration needed for stock pot

Hi, I'm hoping for some help here. I've bought a stock pot which can be used on the gas hob or inside the oven and I need some inspiration. My first meal is bubbling away at the moment - stewing beef, potatoes, carrots, onions and leeks in vegetable stock.
I'm hoping for some more ideas as I lack imagination in the kitchen. I enjoy preparing veg and stuff for a meal, but can't stand cooking, so I thought the stock pot would be a good thing as I can leave everything to cook without constantly having to check on it.
I'm also rather heavier than I should be
so I've increased my vegatable intake and reduced the amount of more fattening foods that I'm eating.
If anybody has any healthy recipes (nothing too complicated :eek:) I would be very greatful. If it reduces my food bill, so much the better!

When you say "stockpot" is that what a lot of people refer to as a Slow Cooker? If so I can get you loads of recipes :j

-diced shin beef, can of cheap beer (bitter not lager!), beef stock flavouring, onions carrots, sprinkle mix herbs, salt, pepper = Beef in Beer (v 70's!) Substitute left over red wine for beer = beef bourginenon
-de-skinned chicken drumsticks, chopped can tomatoes, garlic, onions, peppers, thyme, salt, pepper, basil/oregano, chicken stock = yummy chicken casserole.
- diced lean pork, cooked (or canned) butter beans, tomatoes, veggies, stock, herbs etc = thrifty cassoulet.0 -

Penelope, it's not a slow cooker. It's like a large pan with two very small handles at the side rather than one long handle. It goes on the hob or inside the oven and has no means of heating itself. I'm in the middle of a major declutter and then I'm intending to have a few jobs done in the kitchen. After that, my mum is going to give me her old, but still working, slow cooker.0 -

So it's a casserole dishIn effect you're using this as a slow cooker, which is exactly what I do using a couple of large dishes, one a red version of this:
