Yeah - sounds good to me although I might add some more water as the mix is likely to stick if you leave it all day. Can you put in some more veggies like sweetcorn or peas or chopped peppers?
The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.
  • I tried something similar to this once and the rice absorbed the liquid and overcooked and stuck to the SC and was a big gelatinous mess when I came in from work. I probably left it way too long, so I would guess that if you only left it for a couple hours it would probably be okay. The problem with rice is that it will absorb loads of water - way too much than it needs to cook and so adding more water is not really the best thing to do.

  • When cooking rice this way, the important thing is to get the right proportions of liquid to rice so that it can't go too gloopy.

For normal log-grain rice this should be 1 cup rice to 1.5 cups water. For brown rice, 1 cup rice to 1.75 cups water. For arborio rice (the traditional rice for risotto), 1 cup of rice needs about 3 cups of liquid.

It helps too if you rinse the rice first to wash off the excess starch.

I cook rice this way a fair bit, but do usually turn the heat off towards the end of cooking, so not 100% sure what would happen in a slow cooker left on all day

    Good luck
