Freezing sausages...

I wonder if someone can help me. I'm cooking a sausage casserole tonight but as there is only me who will eat it, I wondered where I stand on freezing.
The sausages are frozen, will be defrosted then cooked. Is it classed as re-freezing or does the fact that they have been cooked between freezers stints make a difference?

You're fine to re-freeze - to be on the safe side I freeze in serving sized portions and only reheat the one time - make sure its piping hot when you do and it will be delish!

Hi Rach., They will be fine. If you refroze them in their current state - uncooked - I wouldn't do that, but because you are cooking them and changing their state - this is ok to then freeze and reheat once defrosted.

I split them into Vitalite tubs to freeze, then they're just a nice size to go back into the microwave.Liverpool is one of the wonders of Britain,

I don't know how you freeze them in the first place but I was givens this tip. Open freeze the sausages and then when frozen put into a plastic box. You can then get out individual sausages when you need them, rather than maybe having to use the whole packet.0
