Vegetarian Quiche

I have just seen that I have a pack of shortcrust pastry in the fridge which needs using up and thought I might make a quiche/something that will do for a main meal. I haven't ever made one before - just like the idea. How do I make it and has anyone got any recommendations for a filling - many thanks.
I'm not a failure if I don't make it, I'm a success because I :tried!

    As always I recommend the Bero book for the basic recipe. Here's one for broccoli quiche:

    You can of course amend it to your own taste. For vegetarian I would add peppers, mushrooms, onion, possibly sweetcorn....whatever you like really.
    Steam the veg in the microwave then put in the pastry case with any hard cheese you have available...broccoli and stilton works well. Then pour over the beaten eggs and milk. For a more luxurious quiche youe could replace the milk with cream...but not very MSE!

    Don't know if it was just a quiche recipe that you were looking for but I love cheese and onion pie. Basically you just layer grated cheese and sliced onions in a pastry case. Add seasoning and a knob of butter then top with pastry and bake. I found this recipe for you:
