I am going through recipies. Mainly for 'sweet' stuff for the kids so I stop buying shop bought.
All the different types of sugar are confusing me!
Someone explain the difference in the following & tell me anythng else I need to know about sugar.
Till recipe hunting I was aware of caster sugar, granulated & brown sugar that sticks in a clump in the packet but is yummy on porridge! :rotfl: Oh & icing sugar!

soft brown sugar
light muscovado sugar
soft light brown sugar

do I need to stock up on all those different sugars. Sets my teeth on edge just thinking about them all!

Light soft brown sugar is a clumpy and tastes caramelly - you mainly use it in fruit cakes and the like.
Light muscavado sugar is much the same but more treacley
Soft brown sugar is very similar to light muscavado
brown sugar is more usually referred to as demerara and this is like little grains of crispy sugar and often used in coffee and on porridge. It is not so good in baking because it takes so long to dissolve. It's nice in crumble topping and for brulees though because of the crispiness.
I always get Golden Granulated Caster Sugar and find that it is fine whenever sugar (of whatever type) is called for. I never buy muscavado or anything and all my baking is usually fine. I use it in fruit cakes, scones, brownies etc etc. I even make it into icing sugar by blitzing it in the processor!Jane
