one whole chicken - one slightly lost vegetarian!

Im after a bit of help, im currently cooking three meals a week for my nana who is very elderly and in need of help (im granddaughter meals on wheels for the days the real thing doesnt come!)
In my freezer i have one whole roast chicken which i bought to be used at xmas but never happened. its got garlic and herbs on it but i could scrape that off before cooking as she is not a garlic fan. I could keep the chicken for my use but im veggie and DH is veggie/vegan so its going nowhere fast and taking up valuble freezer space!!!
My nana likes traditional meals and i know i could make a chicken casserole from parts of it and do her mini roast dinners for other parts but what about the rest. And should i cook it first or not??
Complete novice at this (tho if i can de thaw and leave uncooked i will be asking my chef mum to take it apart thats beyond me!!!)

once it has thawed you will need to use it quite quickly, so cook it and you can then slice the breast and refreeze that in portions so you just need to defrost and reheat for your roast dinners,the other meat you can either freeze plain and use to make casseroles or other dishes on a daily basis, or bung it straight in a big casserole whilst still hot (so you dont have the reheating twice issue) and then freeze the resulting casserole in portions.
The garlic flavour may have been injected into the meat, but i usually find those flavourings are mostly on the skin, so if you remove that after cooking it probably will only be a subtle taste0 -
Silly really - but make sure that you check for giblets inside and take them out. If you're not sure what they are as a veggie you really don't want to know!!! But they're normally in a plastic bag - just put your hand inside the chicken and check there is nothing at all in there.
If you wanted to put a peeled onion in there then some people do.
