I know different flours absorb liquid differently. In France, flour is labelled according to how refined it is and it has always amazed me that there are several grades of white flour. Which flour do they recommend? It may be that the flour you're using doesn't need as mch liquid?

I regularly make the fruity loaf in my panny. I add the ingredients exact quantities as in the recipe book and in the order that it is listed in the recipe. Never had a problem yet. I use Sainsburys own bread flour and yeast and find this works for me.
  • They hate me too! Luckily I don 't like em, poor OH does though - last time he had to make his own :D
