Breadmaking by hand - couple of questions

I looked in the indexed collections but couldn't find an answer to these specific questions.
When making bread by hand, do I definitely have to use strong flour? I found an old thread where people were using a mix of flours in their breadmakers (strong, plain, self raising, white, wholemeal). I don't have a BM, so would this work by hand? What proportions of each would I need?
As for tins, I have a couple of small ones but don't know what size loaf they will make. What is the capacity/size of a 1lb and 2lb tin?
