Hi you can either make your own pastry which is really easy or use shop bought. Shortcrust is prob the best for what you want just roll it out slightly bigger than the dish you are using brush the top of the dish with some egg and put pastry over crimp it down with either your thumb and finger or with a fork all round the edges. Brush some more egg over the top of the pastry and with a knife put a small slit in the top to let out the steam. The pastry should not get soggy.
Let me know if you need any more info and i will try and help
    Good luck
  • you don't have to have pastry at the bottom for a pie, but if you do want a double crust I find that if you bake the bottom first it doesn't go soggy and always put on a preheated baking tray - this helps too
Blessed are the cracked for they are the ones that let in the light

What about a mashed potato pie topping? You could even cook extra potatoes on Sunday so the mash is all ready & waiting on Monday.
