help! too much brocoli!

morrisons was selling it's 1quid brocoli heads for 9p, so i bought 6, as you do. yummy brocoli and stilton soup i thought (xmas stilton from freezer). BUT i've made that, and enough to freeze, and it only took 1 head, AND i've added it to lunch salad AND we've had yummy brocoli and ham risotto (with morrisons cheapy mixed ham ends :D). There will probably be a stirfry tonight...

So does anyone have any more ideas? Can I freeze it? If so, should I cook it first?

THANK YOU!! (and sorry if you've noticed a theme with my threads, mostly along the lines of Help! I've overbought on something cheap!!! - but they've always worked out for the best in the past so i'm sure it will be ok, unless we both turn green this week! :rotfl:)

broccoli will freeze - I don't bother blanching but freeze portions in bags so that they can be microwaved straight from the freezer:

I have reused these bags up to 10 times very successfully, although it says that they are for one use. I also found some very much cheaper ones in Home Bargains.

A curry, with broccoli as the veg. Or how about Broccoli pasta. You could saute in Olive oil, with garlic, bacon, black pepper, chopped tomatoes, and herbs. Serve with loads of strong cheese.

    Hi 23rdspiral,

Broccoli cheese bake is a favourite here. This thread has more ideas that may help:

    broccoli

I'll add your thread to that one later to keep the suggestions together.

    It freezes really well.

How about slicing the stems off to pop into stir fry or soup. Use the heads cooked and mashed into potato....mash with cauliflower as an alternative to mashed potato or mash and add to pastry or pasta dough for a difference.

wow! thank you everyone! Sorry for not spotting the other thread.

Thanks for the freexing advice, i'll do that right away.
The simple brocoli pasta dish sounds lovely, and i stupidly hadn't thought of adding veg to pasta bakes :o, so will be doing that from now on. Green mash sounds fun! I also hadn't thought of adding it to pasta or pastry, but i dont make those often, so now i'm wondering if potato&brocoli cakes might work! :D

    Broccoli Pasta
Cook pasta according to packet instructions.
Cook broccoli in boiling water until soft.
Toast some chopped walnuts in the oven until lightly browned (optional).
Mix some breadcrumbs with a tsp of chilli powder and toast in a pan with a little butter/oil until crisp.
When everything is cooked, mix together pasta, broccoli, and walnuts if using, with some grated cheese. Serve topped with chilli breadcrumbs.

Simple to make, but really tasty. The original recipe didn't use cheese so you could leave it out, but everyone in our house decided they liked it like that so that's the way I do it now.
