Sorry if there is already a thread about this and if there is can someone point me in the right direction?
I'm a vegetarian and always struggle to come up with new ideas for my lunch, other than the usual sandwich/wrap type thing or pasta. I would take leftovers, but there is no way to heat things up so whatever I have has to taste good cold...
Any ideas?

I do a cooked pasta with mayo stirred through it, then add chopped tomatoes(not tinned), cucumber, sweetcorn, peppers and spring onions. For my other half i add tuna to his. Its quick to do first thing in the morning, when the pasta is cooking I prepare all the veg.0

hi there, you could buy an inexpensive flask and take homemade soups to work or splash out a little more for a food flask to put your leftovers in. Some things like spanish omelette taste good cold.Pay One Debt 2012 £130/£130 :j0

A slight variation on pasta would be using rice / cous cous / quinoa.0

I was thinking about lunchboxes today as I read the report that most lunchboxes are unhealthy - well not in this house!
I have two boys (so read that as being they eat everything in sight twice over) and I bought them foodflasks, they are readily available from Morrisons, Sainsburys etc. They take leftovers heated up, soup, stew, chilli con carne, tomorrow they are taking fried rice for lunch. It stays hot for about 6 hours so should stay warm until lunchtime - you can get an unbreakable one from places like Lakeland although it is a bit more expensive.

You don't have to buy into the whole special box thing (altho' I do) but they are fab sources of ideas for different things to put in boxes.
For example, i'm vegetarian and have had:
hummus and veg wraps
black bean chilli and rice (in an insulated container)
soup and crackers
leftover hm egg fried spicy rice
last week.
There's a much bigger thread on lunchboxes, I'm sure a guide will be along in a min to add this to it!0 -
