What to do with Red Currant

Hi,

We have just moved into this house and there's quite a lot of red currants and it seems they are all red now.

Any idea how to use them and preserve them?

    If you are lucky and the blackbirds don't pinch them all then just eat them with a little sugar.
    Otherwise you can turn them into redcurrant jelly very easily. Excellent with roast lamb.
    Some more some more currant ideas
    When stewed you can throw them in smoothies.
    Easy to bottle. I'm now using recycled pickled veg jars such as lidl's red pepper jars. Just fill with berries, pour light syrup round to within and inch of lid put up to the neck in a saucepan of water and raise to simmering point over about an hour, keep at this temp for about 10 mins then tighten lid and cool. If you search fruit bottling you'll find more detailed instructions.

    Make sure they really are ripe before you pick them though. If the birds have not snaffled them it does suggest they're not quite ready. Have you got any netting you could sling over some canes to protect them?
