can I put salad leaves in soup?

Sorry BG's I know it's here somewhere, but I can't find the soup thread:o

I've got 1/4 bag of baby salad leaves, not crispy any more but not gone to mush yet! can I chuck them in hm veggie soup?
if not then they will go on the compost heap.

  • Hi Annie,

I always put my 'sad' lettuce leaves into my veggie soup. I try to make soup the day before I do my weekly shopping so that I can use up the contents of the fridge and make some room.

A big bowl of hot veggie soup sounds yum.

I do this too. I also add them to stirfries.
I do prefer to shred them though and I add them to both dishes, at the last minute, when I've taken them off the heat and just before serving, so they just wilt down lightly.

Great idea, I've stir fried spinach and watercress from salad bags (when left over from parties) but would it be worth it with various lettuces etc?

Yup - there are recipies on T'internet for lettuce soup if you are in any doubt - same with watercress soup.

Word of caution though - re bitter tasting leaves, too much may sour or spoil the flavour of your soup.
