Cheap biscuit and cake recipies.

Please could I have some cheap and idiot proof recipies please, as these are one of the things I want to get to grips with making.

    my sponge recipe is to break 3 eggs and weigh them (about 160g), then add same amount (160g if it is) of sr flour, caster suger and butter or spread, add a little vanilla essence, whisk, then into cake tin, and i bake for an hour at 160.

    this is also the same recipe for microwave sponge pudding, 1 egg for each 2 people, into microwaveable bowl and do for 2 or 3 minutes until a knife dipped into the middle comes out clean.

    Have a look at the Be-Ro website. You can also send off for the recipe book or Co-Op sells it for about a pound. All the recipes are very easy and I've tried lots and they have always turned out fantastic.

    Hello OP,

    I'm glad you started this thread - I was considering doing something similar.
    This recipe is dead quick and easy, cheap and makes a really delicious cake.

    You can use any size of cup from a teacup to a mug, but use the same size to measure the flour and the milk!

    Chocolate Manitou

    Grease and line an 8” tin.
    Preheat oven to 180º C.

    Heat gently together in a saucepan:
    3oz butter or margarine
    1 cup milk
    1 ½ oz cocoa powder
    (or replace cocoa with 3oz plain chocolate & reduce the sugar you're about to add to 2oz)

    Stir until melted. Remove from heat and allow to cool a little.
    Add 3oz granulated sugar, 1 beaten egg and ½ teaspoon vanilla extract.

    Sift together
    1 ½ cups self-raising flour
    1 teaspoon baking powder.

    Stir the hot chocolate mixture into this and whisk until smooth.
    Pour into prepared tin and bake for about 25 minutes.

    [Be-Ro]Melting Moments:

    2 and 1/2 oz SR flour
    1 and 1/2 oz caster sugar [i have used granulated]
    half teaspoon vanilla essence
    Rolled oats or dessicated coconut
    optional glace cherries

    -Cream marg & sugar then add vanilla essence
    -Stir in flour and mix thoroughly
    -Divide mixture into 20 pieces and roll into balls [with wet hands] and coat with the oats or coconut
    -Place on greased baking sheets and press slightly then put a bit of cherry on top
    -Bake in moderate oven 325-350*F / gas mark 3-4 for 15-20 mins

    Ive been making these for 25 years, very quick and easy, this quantity fills a tray bake tin. You can make them as big or small as you like, and the amount of oats used is quite small.

    Melting Moments - these are so divine! One of the mums used to make these for our whole class when I was in primary school. What a beautiful memory...
    just remembered that the chocolate manitou recipe (post #4) can also be poured into a rectangular tin (swiss roll size), then iced and cut into squares like a traybake. It goes a bit further that way too!
  • I love my BERO book I've had one of these ever since I left my Mum and Dads house in 1992 !! Me and DS bake using recipes from it regularly and my Mum always uses it too.

  • can anyone point me in the direction of a recipe for ginger bread/cake thats done in the bread maker??

    a friend used to make me some a few years back in his bread maker and it was wonderful; I used to slice it up and use it as ginger pudding and serve with custard. now i have a bread maker of my own but cant find the recipe anywhere.

    ok made the manitou recipe thanks. Was a bit worried as looked like the outside was burning and the inside not cooking but came out ok. Just not risen as much as i'd thought but that's down to my mon existent arm muscles!
    Actually very nice, very rich as well so will last longer as you'd only need a small bit each time. Will definitely cook again, esp as neighbour kindly given us full fat milk i don't normally use but can use it up in this. Think the boys will wolf this down after school later!

    How much marg please? It is in the method, but not the ingredients :-)
