Struggling with mortgage amount

Hiya, Me and my girlfriend are looking to buy our first property. Our problem is that I am self employed and have not got anything like 2 years accounts.
We have a £60, 000 deposit, and have been told she is able to borrow £70, 000 on her own, and we are looking for around £80, 000. So it is very close, just not quite enough.
The bank only have to take my word that am earning more than about £3000 a year to lend us the £80, 000.
To me this seems extremely risk free for the bank if we are providing a 40% deposit.
Is there anyway that this will be possible? Anyone have any advice or ideas?
Thanks very much for reading.

Was told this by London and County Mortgages.0

London and County are brokers so we can only guess at the lender and their income multiples or calculation of affordability. Higher multiples may be available elsewhere or, if you can get some confirmation of your income, such as self assessment and tax calculation or accountants statement, this might get you the £80,000 you need.I am an IFA & Mortgage Broker
