What can I do with a surplus lot of hm salsa?

OH made some of his HM salsa to go with the Fajitas he was making. Very tasty but he has made loads (casserole dish full). We arent going to use it all for the fajitas. Does anyone have any ideas what I can do with it?
I really dont want to chuck it as its so wasteful.

    You can probably heat it up and use as a pasta sauce, or similar?

    Make it into soup! Add some stock and maybe a tin of chopped tomatoes. You could then serve i cold or heat it up. You could blend it with a hand blendr if you wanted or leave it chunky.

    Serve it over some simply grilled meat of fish.

    Ooooh, nachos!!!

    I would have a HUGE plate of tortilla chips, pile on the salsa and top with cheese then under the grill. Also like a generous sprinkling of jalapeños on top.

    Turn it into pasta sauce? Just warm it up and drizzle over pasta.

    Do you have any tortilla's left as well? If so lay one out as a pancake spread the salsa on liberally, grate cheese and place another on top and dry fry in a pan - makes a mexican quesadilla (like a toastie really).

    What type of salsa is it? Could it somehow be incorporated to make a chilli with some mince and kidney beans?

    I will quite often serve salsa with chicken, either a whole roasted chook or breasts and serve with roasted sweet potatoes. I don't know why, but to me sweet potatoes and spicy salsa are one of my favourite combinations.

  • yep some top ideas here! got to be a chili for me - add mince, any beans, tin of tomatoes, carrots, peppers, mushrooms if you have them. then you can freeze the surplus! yum!
