Chicken carcass meat- now what?

We've had the roast chicken dinner, I've sliced off the meat (to make other meals) and boiled the carcass up to make stock and picked the *meat off it.....
....can I now use that meat* in the soup? - as it make be reheated more than once again and or frozen. The orginal chicken was a fresh one

I always use the picked off meat for my soup. I've done this for years with no ill effect, you can freeze this for later.
I frying an onion in some butter, add garlic & thyme then add plain flour. Then slowly add the stock to this add the chicken heat through, season to taste - if I'm feeling flushed I add cream other wise it's milky flour;)
I don't measure stuff but it's about 40 grams (guess) with about 1-2tbsp of flour - if you've made a white sauce it's like doing that just with stock instead of milk.

You can use it in the soup. I've done this today with chicken broth. I also put hafl the carcass meat in a bowl with mayonaise and whizz it up, then add sweetcorn to make sandwich paste which goes alot further for lunches than chicken slices.0

Yes I put this 'meat' into the soup when I make one - if just making a stock I chuck the 'meat' in with the 3rd or 4th meal I make with the scraps ie. the chicken fried rice, risotto, pasta stage of proceedings x
