Ready Steady Cook AKA Basically, baking with no eggs!!!

Hello

As you may have seen from other posts, I am a little(!) tight on the money front until my pay day next Friday:eek:

I am getting the evening meals pretty much covered and lunches once I have bought a loaf of bread but was thinking of baking something sweet. Normally I would say, oh I don't have anything in but I thought I would get together what I have and give you lovely people a challenge to come up with something for me to make:rotfl:

I hope this is as interesting as I think it is!!!

Ok I have got:-

- Self Raising Flour prob about 750g
- Plain Flour prob about 1kg
- Brown cane sugar but only about 50g
-Flora - 500g
-Cooken 1/2 block left over from mince pies thread on here
- Honey - 3/4 of a jar
- 3/4 pack of digestive biscuits
- Golden syrup full squeezy bottle
- big bag of marshmallows
- Strawberry sauce for ice cream (ok getting desperate now)
- double cream but need to defrost thoroughly so probably more to serve with something than as an ingredient. Also some ice cream.

I am a (learning) okay baker so far I have had many successes and I have pastry cutters, bun trays etc and a fan assisted oven.

Any ideas??? :T

    I was one of those, and can't think of anything :o What's cookeen - will it make shortbread :confused: If you have chocolate, you could make Rocky Road - google as there are loads of recipes, so pick one that you like the look of :D Or you could make scones - with cream and strawberry sauce :rotfl:

    yes i do - albeit some weird vegetable "healthy" oil that we got a sample of at the supermarket, but it is a decent sized bottle

    I think Cooken is like lard/fat but it is an alternative of TREX - the key ingredient of the pastry on the best mince pies ever thread, I think people that could not find these used butter?? And thanks for the Rocky Road suggestion but if I had chocolate I think I would just sit and eat it LOL LOL x

    if you google vegan cookies, they will have lots of recipes with milk/applesauce instead of eggs :)

    How about crushing up the digestives into lumpy bits, put them on a baking tray (make sure its greased or papered otherwise it'll never come out!) and then melt some of the flora, sugar & golden syryp and pour it over the biscuits to make a sticky base. Squash the biscuits into the tray flapjack stylee and then push a few chopped up bits of marshmallows into the mixture and anything else u have (cherries, sultanas, choc chip cookies, seeds, nuts etc!). If you did have a little bit of choc it would be even better as u got melt it and dribble artistic lines over the mess, or icing if u have some icing sugar.......


    Make some pastry using the mince pie recipe (best in the world IMHO!) and then make jam tarts using the ice cream sauce? They would probably freeze well to last a bit longer

    Thanks everyone I will check out all the suggestions and websites, I often run out of eggs before other ingredients because we use them for savoury meals as well. Bunny. Thank you so much. If I could do the emotion of bowing down to you I would. I really don't have much of an imagination! I think I will have a go at this, I have actually remembered I have some chocolate spread so could use that I suppose!!
