Hoummus

Options
Has anyone ever tried freezing it? I tend to use half and throw the other half and I begrudge doing that. Never seem to get through the small tub.

    I make my own and freeze it and its fine - just like fresh (once defrosted!). I'm not sure about shop stuff though.

    If I were going to freeze bought hummus I'd decant half into a smaller container and freeze it straight away rather than letting stay in the fridge until you'd used half and then freeze the remainder.

    I've frozen bought hummus when it's been reduced on it's sell by date and never had any problems.

    I still think that however cheap it's been reduced to the stuff I make myself is far tastier and probably as cheap.
    You just put a drained tin of chick peas in a processor, throw in some tahini, olive oil, lemon juice and garlic ,whizz it up with some salt and cayenne and your done.

    I admit I soak dried chick peas overnight and pressure cook them 10mins so it's a bit more involved for me but if you're soaking and pressure cooking some for a curry or salad it's no problem to do a batch of hummus at the same time. I buy my chick peas in a 2kg bag from an asian shop so they are very cheap but if you've a cheap source of the tinned variety they are just as good and it means you can knock up a batch of hummus in less time than it takes to do the washing up.

    I buy the reduced fat variety from the shops but I think I will start making my own as I do eat a lot of chick pea curries. And as you say, Ted, they are very cheap to buy in Indian shops and I do a big pulses, lentils, chick peas and gram shop every couple of months.

    Thanks for letting me know that I can freeze hoummus.
