I talked about this to a baker some time ago, and she confirmed that the additives were mostly vitamin C. I experimented for a while using a bit of orange juice in the mix to replace water, about a third/2 thirds if I recall correctly, and it worked quite well. Also I've often used the breadmaker to mix the dough then transferred it to the oven in a real bread tin, you get a better loaf generally and you can also prove it in the old fashioned way in an airing cupboard.0

I have been using the recipe on the side of the Sainsburys bread flour packet and have found this makes a lighter loaf than using the recipe book.
The recipe is:
320ml warm water
500g strong white flour
25g butter (I've been using margarine and it has been fine)
1 tbsp sugar
1.5 tsp salt
1 tsp yeast0
