Inspiration: Leftover Mushrooms & Caerphilly

Good afternoon all! This is the first time I’ve ever started a thread so hopefully it’s appropriate to ask. I have some mushrooms and Caerphilly cheese left in my fridge which could do with being used up. Any suggestions? Would they work in a quiche?

    Quiche, omelette, on toast, wrapped in a pancake with grated cheese over the top and grilled until bubbling, as a topping for jacket potatoes, sliced and added to sliced potatoes and onions for a gratin type dish.

    I love mushroom and cheese risotto - if you crumble the caerphilly in right at the end you get little chunks of cheese, which is rather nice. :)

    I think quiche would be good, too, although I don't make quiches very often so I couldn't tell you how to go about it. :confused:

    be yummy in a quiche, or don't bother with patsry and do a fritatta, or with pasta - mmmm cheese and mushrooms is one of my fav combos
