Easiest cake to make?

Hi, any suggestions? On my quest to get myself cooking again I'm going to bake a cake. Does anyone have a super dooper recipe's to push me along? Ta very much.

    Victoria sponge:

    6oz marg & 6oz sugar creamed together
    Add 3 beaten eggs and a few drops of vanilla essence
    Add 6oz self-raising flour

    Put in 2 greased 7-inch sandwich tins and cook for 20 minutes at 180 deg.

    To turn a Victoria sponge into a tangy sticky lemon cake.

    You could add the grated zest of a lemon to the mixture above. Instead put it in one cake tin and cook if for a little longer.

    In a small pan heat up 3tbsp lemon juice and about 3oz icing sugar into a clear syrup. When the cake is still hot and in its tin, get a fork and !!!!! it all over the top. Slowly pour over the syrup until its all absorbed. When the cake is cold take it out of the tin and enjoy.

    Sponge cake with pineapple

    340g/12oz self-raising flour
    340g/12oz butter
    340g/12oz caster sugar
    6 eggs
    Dried pineapple

    Try this - can't get much easier or yummier!!

    Muesli Slice
    1 cup = 250ml volume
    1/2 cup = 125ml volume

    Ingredients:
    2 medium size eggs beaten
    4 oz butter
    2 tbsp honey
    1 cup natural muesli (even better with deluxe nuttier ones)
    ½ cup brown sugar
    ½ cup desiccated coconut
    ½ cup currants
    ½ cup chopped dried apricots
    ½ cup wholemeal flour (plain or self raising)
    ½ cup flaked almonds

    Method
    1. Preheat oven to 160°C
    2. Grease and line the base of a deep sided 19cm x 29 cm traybake tin
    3. Melt butter and honey together gently in large pan. Remove from heat and allow to cool.
    4. Add all ingredients to pan except eggs and mix well.
    5. Then add beaten eggs and mix well.
    6. Press mixture into tin and bake for 30-35 mins.
    7. Turn out onto wire rack and allow to cool. Cut into slices with sharp knife to serve.

    I sometimes do this, but use two sandwich tins. Then when they're cool, sandwich them together with HM lemon curd. :drool:

    With the sugary syrupy goo on top?

    Sounds lush!

    Next time I make pavlova and have a load of yolks left over, I'll whip up some lemon curd and make it!

    look up delias all in one sponge ( or pm me and ill send you the recipe )
    on line her recipe shows a complicated filling but it can just be jam and cream

    never fails.

    Passion Cake
    Ingredients
    280g self raising flour
    175g soft brown sugar
    50g walnuts chopped
    3 Eggs
    2 Ripe bananas
    1tsp cinnamon (optional)
    175g grated carrot
    175ml Oil

    Preparation
    Beat all ingredients together in a bowl until all mixed together

    Pour into a greased 18 cm round cake tin. or bake in an rectangle tin for tray bake passion cake.

    Bake at 180 degrees C for 1 hour.

    Easy and very tasty - can be topped with icing especially nice with lemony cream cheese icing

    Yoghurt Cake

    1/4 pt vegetabel oil
    1/4 pt natural yoghurt
    1/2 tsp vanilla essence
    6 oz soft brown sugar
    3 eggs
    8 oz self-raising flour
    1 oz cocoa powder
    1 tsp sodium bicarbonate
    1/2tsp salt

    Filling
    1/4 pt double cream
    1/4 pt natural yoghurt
    8 oz fresh strawberries

    Oven Setting: Gas mark 5/190C

    Place oil, yoghurt, essence, sugar & eggs in a bowl. Whisk together for 2-3 mins. Sieve in flour, cocoa, sodium bicarbonate & salt beat for 1 min. Pour mixture into 2 sandwich tins & level. Bake for 20-25 mins until tops springs back when pressed. Turn out onto rack & leave to cool. Mix together yoghurt & cream & use to cover one sponge. Place halved strawberies on top then place remaning sponge on top. (or you could use any filling that you like):drool:
    Can also be cooked in a microwave but you would need to experiment with your individual model ( I used to do it in mine in about 3-4 mins)
