Chicken question please

I have a chicken in my slow cooker today and I am going to try as per the rubber chicken thread make it streeeeeeeeeeeeetch for at least 3 meals. My question is about stock to make one with the carcas in the slow cooker can you put it in without any other ingredients or is it best to add veg? I have none spare to use if it is the case that adding veg is best can I freeze the carcass untill I can get to the shops to get some more supplies? TIA

    You can make it without veg but it will be better with at least an onion for flavour. I would freeze the carcase until my veg stocks were replenished;)

    I put my carcase in with herbs, garlic and loads of water. Boiled it for a few hours, then added carrots, leeks and a pasta / pulses mix for soup - we'll have it for lunch today - will be OK - nice and warm anyway!
    Me, OH, grown DS, (other DS left home) and Mum (coming up 80!). Considering foster parenting. Hints and tips on saving £ always well received. Xx

    March 1st week £80 includes a new dog bed though £63 was food etc for the week.

    Beware when cooking chickens as too long cooking can take most of the fat out of the carcase & leave the meat dry.
    Stock /soup can be frozen indefinately & used for curries sauces &c.

    if you've no spare veg next time - remember that as it's stock from bones and you'll sieve it anyway, you can use the pealings from the veg... so the onion skins (great for the colour), the carrot pealings ect... very thrifty and very MSE!!
