Ready to make marmalade - pressure cooker broken!

I always make marmalade in the pressure cooker. One of the bits is broken and I'm waiting for a replacement. Seville oranges don't keep long because they aren't waxed.

I cook my oranges in the pressure cooker for 10 mins. All the recipes I've looked at for conventional cooking say 2 hours - that can't be right, can it? Normally pressure cookers cut cooking time by a third. Also, conventional recipes seem to call for double the amount of water than the recipe I use (1lb fruit, 1pt water, 2lbs sugar)

Conventional recipes will need more water than the pressure cooker version because there's more evaporation. You then boil until enough of the water has been driven off to make the marmalade set, so if you've put a lot of water in it'll take a good while. It's a bit trial and error!

If you'd rather wait till your pressure cooker is mended then why not freeze the oranges whole? They make perfectly good marmalade when they've been thawed out.
