  • Any floury potato is best. I prefer Roosters but when not on offer I always use Maris Pipers.

    Wilja seem to be a good all-round potato.

    any potato that will bake or mash nicely! dont use waxy potatoes which are good as salad potatoes. my favourites are maris piper, king edward and desiree . I dont like estima or wilja as they seem to have a high water content and make the oil all frothy. they dont taste right either - I prefer to use mccain home fries or aldis golden fries if i cant get the right chipping potatoes. I have a brill deep fat fryer and even those darned oven chips taste better cooked in it!
