Ideas needed

I have 3 cartons of Tomato Juice that are near their 'use by' date. I would love some ideas of how to use them. I did think of using one carton with tinned toms to make soup - do you think this would work?

    They would work fine in soups or as liquid in any sort of tomatoey dish, bolognese, sauce for meatballs, chilli, meat-free pasta sauce etc.

    Or freeze them. Transfer them into smaller portions size containers first if you think this might be more useful in future or you think the cartons might pop!

    Hi iris,

    I have used tomato juice to make soups and it works well. It can also work well in casseroles etc. If it needs to be used up now you can freeze it in an ice cube tray and once frozen pop the cubes into a bag then you can lift out as many as you need at a time to add to stews or casseroles.
