Not being paid for hours worked

Hi got made redundant from my office job in Sept 2009, after many CVs, phone calls etc i took the 1st job offered as i realised the job market was very tight. I am now a housekeeper on minimum wage for a hotel chain.
Hard work, poor pay- but i have young children,mortgage and all the other outgoings - like everyone else.
We should receive a weekly wage slip - as of Sept todate i have around 7 wage slips. When i ask the manager she doesnt know where they are or they havent come in yet. My wages started to seem lower and lower and i then decided to keep a note of all hours worked - she had missed off around 20 hours over a two week period. I approached her and she said i would get it next week, nothing, i have since asked around 4-5 times left her notes and then a formal letter stating the hours worked and what i should have been paid. Basically she promises this week and next but nothing since end of November. I have now talked to the other hourly paid staff and they also have hours missing and have basically have put up with it for fear of losing their job and then having no wages. I am also beginning to feel the same i need the money-but i know that what she is doing is so appalling wrong - Do i go above her head to the district manager knowing then i wont been needed any more and then be jobless?
suggestions please.

You need to make your intentions clear by raising a grievance under the companies grievance procedure stating the hours worked and what you have been paid. It is worth stating that you believe this is classed as an unlawful deduction of wages.
Any big hotel group will have a HR department who will deal with this. So I would go above the manager to get it resolved.
I work in the HR and payroll field for the hotel sector and am happy to say we pay all our staff legally. Unfortunatly there are a lot of cowboys out there and companies do act illegally in some cases.0 -
There could be many reasons for the shortfall, not all of them, in fact most of them, not legitimate.
You say you haven't had payslips and that you haven't been paid for all of your hours. How do you know this? The difference may be down to proper deductions of tax and National Insurance.
Whatever the case you must talk to someone at the Head Office HR/Payroll department to find out what has happenned to your payslips and potentially missing hours.0
